February 2026 — Dubai, UAE (event floristry intensive) — our home city in the Gulf — the studio, the academy and the toughest flower climate we teach in.
The home studio in Dubai is not the easiest room to teach flowers in — the Gulf heat sits outside the doors, and the space itself is honest and industrial, black-and-white walls, grey tiled floor, tall metal-framed windows that catch the afternoon light. This February the academy turned that plainness into an advantage, giving over three days entirely to event floristry: the large-scale work that has to fill a wedding or a brand launch and hold its own across a whole room.
The class worked in two clear moods. One was pale and quiet — a circular arch built up in cream roses, blush garden roses, white craspedia and drifts of pampas-coloured amaranthus that hung down like fringe against the black backdrop. The other ran warmer and bolder: a dusty-pink draped frame, its uprights pooling into coral and burgundy at the floor, orange and amber orchids threaded through roses in every shade of pink, spilling off the tables and onto the tiles.
Between the two, the tablescapes did the real teaching. A long draped runner of cream and ivory trailed its cloth across the floor beneath a suspended cloud of blooms, lit gold as the sun dropped through the windows; alongside it, a pink tablescape ran hot with orchids, anthurium and candlelight.
It closed the way these editions tend to, warmly and a little proudly — the group gathered by the pink frame, certificates in hand, the finished flowers still standing behind them.

The three days
Every touring edition runs the same Lacy Bird programme, rebuilt around the local market's flowers:
- Day one — colour theory and the house palette, the composition system, the boxed arrangement and the round commercial bouquet.
- Day two — the spreading bouquet, wrapping and presentation, and a professional photoshoot of every participant's finished work.
- Day three — large-scale event decor and installation, the business of floristry, and certificates.
