Hydrangeas provide dramatic volume — a single stem covers 15-20 cm of arrangement surface — which makes them the highest-value-per-stem flower in most bouquet work.

Peak: June through September (Northern Hemisphere)

Supply from:

The "antique" hydrangea premium

By late August-September, growers deliberately let hydrangea heads age on the plant to develop rust, pink, green, and burgundy tones. These "antique" hydrangeas cost 40-80% more than fresh but read signature-editorial.

Care — the hydration issue

Hydrangeas wilt fast without water. The critical care rules:

Buy:

  • Fully developed heads
  • Firm to the touch
  • No brown edges on individual florets

Immediate hydration:

  • Cut stem diagonally
  • Split woody stem end 2 cm with knife (NOT hammer)
  • Submerge whole head in cool water for 30 minutes if wilted
  • Then place in vase with cool water

Never:

  • Hammer the stem (destroys tissue)
  • Leave dry-cut for more than 30 seconds
  • Place in warm water

Storage: 4-8°C, in water. Refresh water daily.

Vase life: 4-10 days depending on freshness at purchase.

The reviving-wilted-hydrangea trick

If a hydrangea head has wilted:

  1. Cut 2-3 cm off the stem end
  2. Split the woody portion 2 cm vertically
  3. Submerge the ENTIRE head and stem in cool water
  4. Leave for 30-60 minutes
  5. The head absorbs water directly through the sepals

This works with dramatic effect on wilted hydrangeas.

  • Antique variety: order 2-3 weeks ahead of peak
  • Standard varieties: available week-of

For a January-March wedding, budget hydrangea at 2-3× peak price or substitute.

Common hydrangea mistakes

Hammering the stem. Destroys tissue and blocks water uptake. Use a knife split, not a hammer.

Warm water submersion. Cool water only for revival.

Dry-cut too long. Even 60 seconds in dry air causes air locks. Submerge immediately.

Skipping the stem split. Woody stems can't absorb water fast enough without the split. Every hydrangea needs this.

Direct sun display. Hydrangeas transpire heavily; direct sun wilts them within hours.

Substitute considerations

Off-peak alternatives:

  • Viburnum snowball (green-to-white, spring)
  • Lilac (compact clusters, spring peak)
  • Peony (short season overlap with early hydrangea)
  • Snowball hydrangea (a viburnum, not true hydrangea — larger heads, spring peak)
