24–26 May 2025 — Amsterdam, Netherlands — teaching a stone's throw from the world's flower auction.
A short drive from Aalsmeer, where the world's flowers change hands before dawn, three days of late May were given over to a room with grey and pale-wood walls and a single black pedestal near the window. The setting was plain on purpose. Everything that mattered arrived in buckets: coral and orange roses, garden roses in butter yellow, white and lilac hydrangea, tall spires of delphinium and stock, iris, ranunculus and the odd flat face of an orange gerbera.
The palette held to three notes across the edition — coral, orange and lilac — and the class worked them both ways. One morning it was warmth: coral roses and a bruised-pink peony loosened around a white hydrangea, a blush anthurium tucked to the side, the whole thing gathered airily rather than packed. The next it cooled into lilac and yellow, lavender roses meeting purple stock and deep-blue iris in the academy's own branded hatboxes.
There were larger builds too, arrangements sent up onto the pedestal to be read at a distance, and hand-tied bouquets carried the classic way — radiating stems, a length of ribbon at the binding point. Between them, people simply looked pleased. The photographs from these days are mostly of makers holding their own work, some grinning outright, some studying what they had made.
It closed the way these editions tend to. The finished bouquets went out into the Amsterdam evening in Lacy Bird's green wrapping paper, the name reading plainly across the front.

The three days
Every touring edition runs the same Lacy Bird programme, rebuilt around the local market's flowers:
- Day one — colour theory and the house palette, the composition system, the boxed arrangement and the round commercial bouquet.
- Day two — the spreading bouquet, wrapping and presentation, and a professional photoshoot of every participant's finished work.
- Day three — large-scale event decor and installation, the business of floristry, and certificates.
