15–17 November 2025 — Dubai, UAE — our home city in the Gulf — the studio, the academy and the toughest flower climate we teach in. The edition sold out.
The three days began, as they always do here, with the flowers themselves — and in Dubai that is never a small thing. This is the toughest climate the academy teaches in, and so the studio's tall windows became the whole point of the room, throwing a low autumn light across everything set beneath them. The first builds rose straight into that glare: loose, garden-scaled arrangements of blush roses and pale dahlias, threaded with blue delphinium, purple iris and cow parsley, some of it left to spill onto the polished floor like something half-wild that had wandered indoors.
By the middle day the work had turned to the table. Cream cloth ran the length of the studio in soft, gathered folds, and along it the class laid out two moods at once — burgundy anthurium, rust foliage and dried grasses at one end, powder pink and cloud-blue hydrangea at the other. Pampas and bleached plumes ran the whole way through, drifting up a draped backdrop that framed a doorway of light.
Then the smaller, more personal things: hand-tied bouquets carried out into the daylight to be photographed. Peach roses and pincushion protea, blue hydrangea, curly-petalled ranunculus, the occasional pink gerbera turned to the sun. Each student held their own, and no two were quite alike.
It closed the way the good ones do — the whole room gathered together in the evening light, certificates in hand, tired and pleased. Sold out, and quietly worth it.

The three days
Every touring edition runs the same Lacy Bird programme, rebuilt around the local market's flowers:
- Day one — colour theory and the house palette, the composition system, the boxed arrangement and the round commercial bouquet.
- Day two — the spreading bouquet, wrapping and presentation, and a professional photoshoot of every participant's finished work.
- Day three — large-scale event decor and installation, the business of floristry, and certificates.
