December in Dubai is not the easy season it sounds; it is, by the studio's own admission, the toughest flower climate they teach in. So there was something fitting about spending three sold-out days, the 13th to the 15th, in their home studio here in the Gulf — a plain industrial room with tall gridded windows, the winter light coming in low and warm across concrete floors and folding tables. The palette was set early and held: deep magenta and red, worked against blush.
The bench work came first. Under the windows, students built dense compotes in pale ceramic vessels — magenta gerbera and spider chrysanthemum packed hard against blush hydrangea, red garden roses and pink snapdragon, threaded with dusty, wine-coloured eucalyptus. Between the flowers there was a lecture, too: an instructor at a screen talking through the unglamorous side of the trade, real-estate formats and the business of running a shop.
Then the room turned to the signature piece. A long table was draped in cream fabric and dressed with red carnations and pampas, laced with hand-braided raffia, wooden ring chains and lengths of red rope trailing onto the floor. Behind it rose a wall of red — roses and carnations massed high against a soft curtain and crimson braids.
It closed the way these editions tend to. Everyone gathered in front of the red installation for the group photograph, some standing, some sitting in the raffia, a few still holding stems, the low sun striping the wall behind them.

The three days
Every touring edition runs the same Lacy Bird programme, rebuilt around the local market's flowers:
- Day one — colour theory and the house palette, the composition system, the boxed arrangement and the round commercial bouquet.
- Day two — the spreading bouquet, wrapping and presentation, and a professional photoshoot of every participant's finished work.
- Day three — large-scale event decor and installation, the business of floristry, and certificates.
