The peony is the most-requested bridal flower in the world. Its short season (May-June in the Northern Hemisphere) and dramatic bowl- sized bloom create the visual weight brides seek, but they also create the two problems every wedding florist has to navigate: availability and cost.
This guide covers when to have a peony wedding, what off-season supply actually costs, and specific bouquet designs.
The season problem
Peak Northern Hemisphere peony season: May-June, with early supply from Israel in April and late supply from cool-climate regions (Alaska, Canada) into July.
Off-season supply: Chile and New Zealand grow peonies for November-January delivery to the Northern market at 3-4× peak prices. Quality is usually excellent but the price shock is real.
Peony wedding scheduling:
- May-June wedding: peak season, best price, widest variety
- April or July: shoulder season, moderate price premium
- November-January: Southern Hemisphere supply, 3-4× premium
- February-March or August-October: out of season entirely — peonies are unavailable at any price except from long-storage Dutch inventory (poor quality)

4. Off-season peony substitute (double tulips)
If your wedding is Feb-April or Sep-Nov and you want peony aesthetic without the price shock:

Reads as: peony-adjacent, seasonal, sophisticated. Nobody at the wedding knows the flowers aren't peonies.

Practical tips
Buy peonies as tight buds. Peonies at the wholesale point should be marshmallow-firm — yield slightly under pressure. If they're already open, they've been out of storage too long.
Force-open if needed. For a wedding, peonies bought 3-4 days ahead can be force-opened by placing stems in warm water (35-40°C) for one hour. This works for stubborn buds.
Refrigerate to slow opening. For a wedding you're planning around, refrigerate peonies at 4-6°C until 24 hours before the event. Then bring to room temperature.
Remove ants. Peonies attract ants at the growing stage. Ants are harmless to the flower and don't damage anything, but they're unwelcome at a wedding. Rinse peonies gently under cool water before use.
Do not refrigerate once open. Fully open peonies collapse in a refrigerator. Only refrigerate tight buds.
