Rosemary (Salvia rosmarinus) is the fragrant Mediterranean herb whose needle-like grey-green leaves release a fresh, resinous scent when brushed. Florists tuck short sprigs into bridal bouquets, boutonnieres and wedding favours as a scented, meaningful accent. Its slender, upright habit and aromatic foliage suit rustic, garden and herb-inspired designs. Long associated with remembrance and fidelity, it carries sentiment as well as texture.

How to choose fresh Rosemary

In care terms this is a moderately demanding flower in the budget price bracket, with a seasonal peak in January, February, March, April, May, June, July, August, September, October, November, December. Vase life is set before the flowers reach the water, so at the shop choose firm stems with no limp patches, fresh green foliage without yellowing, and a clean cut end with no slime or sour smell at the water line.

Conditioning, step by step

Cut stems and strip the lower leaves, then hydrate in cool water for a few hours before use. Rosemary is a soft-stemmed herb and can wilt quickly, so keep it well watered and cool. It dries very well, keeping scent and colour when hung. Use fresh sprigs promptly in bouquets and boutonnieres.

The base protocol, on top of the species specifics:

  1. Work with a clean tool in a clean vase — bacteria are the number-one enemy of vase life.
  2. Recut the stem on a sharp diagonal, taking off 2-3 cm.
  3. Strip every leaf below the waterline — submerged foliage rots and fouls the water.
  4. Let the flowers drink somewhere cool, out of direct sun and away from heat sources.
