Cenolophium, or Baltic parsley, is a tall, elegant umbellifer prized in naturalistic floristry for its airy domes of tiny greenish-white flowers. Cleaner and more architectural than cow parsley, it lends height, movement and a fresh green haze to garden-style bouquets, arches and loose centrepieces. It mixes beautifully with roses, grasses and other umbels. Long-lasting and forgiving, it is a favourite of designers chasing a just-picked, meadow feel.

How to choose fresh Baltic Parsley

In care terms this is a low-maintenance flower in the mid price bracket, with a seasonal peak in June, July, August. Vase life is set before the flowers reach the water, so at the shop choose firm stems with no limp patches, fresh green foliage without yellowing, and a clean cut end with no slime or sour smell at the water line.

Conditioning, step by step

Harvest when the greenish-white umbels are open and fresh. Strip lower foliage, cut stems on a slant and condition in deep, clean water with flower food for several hours before use. Change the water regularly, as the hollow stems can cloud it.

The base protocol, on top of the species specifics:

  1. Work with a clean tool in a clean vase — bacteria are the number-one enemy of vase life.
  2. Recut the stem on a sharp diagonal, taking off 2-3 cm.
  3. Strip every leaf below the waterline — submerged foliage rots and fouls the water.
  4. Let the flowers drink somewhere cool, out of direct sun and away from heat sources.
